Plant Based Food and Beverages

In the production of plant-based food and drink, a residual flow arises, often referred to as okara. This can be, for example, fiber residues from the production of Oat drinks, Soy drinks, Rice drinks, Cocoa drinks, Bean drinks. Also in Beer and Whiskey production also have a residual flow in Beer there is  Brewer´s Spent Grain (BSG) and in Whiskey production there is a Distillery Spent Grain (DSG). These residual flows have a high Food value and can be used as a wholesome food thanks to the still high nutrient content. However, there are major challenges in being able to achieve food quality. These can be microbial challenges during the decay process starting quickly, the material itself is sticky and difficult to handle, volume changes in the production process, the nutrient content must not be destroyed or changed and the material must not be burned.

Oat drink

In Oat drink production, a residual flow of wet oat fiber is formed, some times called okara . The fiber contains several nutrients such as protein and fiber. This material is very sensitive for micro organism growth and turns bad very quickly and therefore needs to be dried and managed in a hygienic way until it is stabilized. Managing Oat drink residues comes with a lot of challenges due to the agglomerations characteristics non Newtonian properties and its sensitivity to rotten.

Soy drink

In the production of soy drink, the solid part of the soy remains, which is called Okara. The Okara contains a lot of water but also several nutrients and can be used as a valuable raw material if it is dried and managed in a hygienic way. The Soy Okara is very similar to Oat fibers and same challenges applies to Oat, Soy and the other plant based drink residues. Here Elajo´s will help with valorization of the residue streams and eliminate the barriers and challenges.

Brewer's spent grain (BSG) and Distillery Spent Grain (DSG) is

Brewer’s spent grain (BSG) and Distillery Spent Grain (DSG) is a by-product of the brewing of beer. The spent grain contains several nutrients, especially protein and fiber. Due to the poor durability of the material, much of it is wasted. If it is dried, the putrefaction process stops and the spent grains can be taken care and Upscaled in to new Food products as a raw material or in new food products.

Other side streams or residues

reCirculating Food Dryer can be used to dry several different residues from plant-based foods and beverages. Residues from PBFB production that are dried can be used in new food products or in animal feed products as raw material that are sent for further processing.

Questions and answers

What can the material be used for after drying?

After the material has dried, a number of possibilities open up for use. It can be used for new food, keep going to feed and so on.

 

In food, dried oat fiber, reOAT, has a great value as a complement or replacement of virgin oats in, for example, bread, health bars, muesli and more. It can also be used to extract protein and produce meat substitutes.

What happens to the water from the wet material?

The water can be condensed and return to a process to create a circular flow of water or be released into the air.

Why do you want to achieve a high degree of dryness?

Wet organic material from plant based food and beverage production becomes bad quickly after it leaves the process. This has to do with the combination of organic material and high water content that promotes microbial growth. If the water is wiped off, lowering the water activity level, the microbial activity decreases and the material lasts long enough to be taken care of. For example, for use in other food products.

Do you work with sustainability issues?

We are working towards the sustainability goals in Agenda 2030, where we have selected five goals where we have the greatest chance of participating and contributing to. These goals are: Zero hunger, Clean water and sanitation, Responsible consumption and production, Climate action and Life on land.
